Favorite Herb Sauce

Looking for a great way to use up those herbs that have sitting around in your crisper drawer on the verge of becoming compost? My favorite herb sauce uses fresh mint, basil, and cilantro, a touch of citrus for acidity, and plenty of olive oil to create a simple but luxurious sauce that can accompany just about any dish. I slather it on grilled bread, drizzled over eggs, fish, chicken, or even as a light salad dressing. You’re going to want to keep this on hand at all times. You can never go wrong with herb sauce.

Herb Sauce

Ingredients:

1 C mint leaves, loosely packed

1/2 C basil leaves, loosely packed

1 bunch cilantro, tender stems and leaves only

1 tsp lemon zest

1/4 C lemon juice

1/2 c olive oil

1/2 tsp citrus chili salt

Place all ingredients into a food processor and puree until a smooth sauce forms. Drizzle over anything that could use an herbaceous punch. Store in an airtight container. The herb sauce will last for up to a week in the refrigerator.
