Fruit Salad with Honey Ginger Lime Dressing
If you could bottle up sunshine, this fruit salad with honey ginger lime dressing would be just about as close to the sun as you could get. The dressing is zippy and bright, with flavors of honey, lime, ginger, turmeric, and coconut. It will take even the most underwhelming piece of fruit and turn it into something magical. And I think we can all use a little magic and sunshine right now.
Fruit Salad with Honey Ginger Lime Dressing
Ingredients:
1/4 C lime juice
1 Tbsp + 1 tsp honey
1/2 tsp ginger, grated
1/2 tsp fresh turmeric, grated (optional)
1 Tbsp unsweetened coconut flakes
4 C fruit, cut into bite sized pieces (I used pineapple, kiwi, mango, and banana, but any fruit will work)
In a small bowl combine the lime juice, honey, ginger, turmeric, and coconut. Whisk everything together until the honey has completely dissolved. Spoon over your favorite fruit and toss to combine.
