Tomato Watermelon Salad with Ginger Scallion Dressing
Nothing beats a giant bowl of icy cold, sweet, watermelon and the ripest, juiciest, heirloom tomatoes. My twist on the classic tomato watermelon salad includes a spicy ginger scallion dressing and loads of fresh herbs to brighten everything up. Perfect for a summer picnic or when it’s so hot all you want to do is stick your head in the freezer. This is quintessential summer eating.
Tomato Watermelon Salad with Ginger Scallion Dressing
Ingredients:
2 tsp grated ginger
4 scallions, thinly sliced
1/4 C lime juice
3 Tbsp olive oil
1/2 tsp kosher salt
4 cups watermelon, 1/4” thick slices cut into medium sized pieces
3-4 heirloom tomatoes, cut into large pieces
mint
cilantro
Maldon sea salt
aleppo pepper flakes
Make the dressing by combining ginger, scallions, lime juice, olive oil and salt. Arrange tomatoes and watermelon on a large platter or bowl, and spoon over a few heaping tablespoons of the ginger scallion dressing. Top with lots of fresh mint and cilantro, flaky sea salt, and a sprinkle of aleppo pepper flakes.
