Gluten Free Strawberry Banana Waffles
Weekend breakfasts are big in our house. My toddler, when asked what she wants for breakfast, consistently says pancakes. On rare occasion when I can convince her that waffles should be had, I try to sneak in some extra protein along with some of her favorite fruits to make it a breakfast my kid will devour. Plus it gives me a mom win for the day, which I’ll gladly take when I can get it.
I absolutely love this waffle recipe. The waffles are light, fluffy, and crisp around the edges- a pillowy cloud of absolute perfection. And did I mention they’re gluten free? This recipe uses almond and oat flour, along with yogurt, banana, egg, and ground flax seed, making it a balanced breakfast that might just become your new weekend breakfast ritual.
Gluten Free Strawberry Banana Waffles
Ingredients:
1 banana
1 egg
1/3 C plain yogurt
1 tsp vanilla extract
1 Tbsp honey
1 Tbsp ground flax seed
1/2 C oat flour
1/2 C almond flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
nonstick cooking spray or oil for waffle iron
strawberries, sliced
syrup
butter
Preheat waffle iron. Mash banana in a large bowl. Add egg, yogurt, honey, and vanilla and mix until combined. In another bowl, combine oat flour, almond flour, baking powder, salt, and cinnamon. Add dry ingredients to wet ingredients and mix together until completely incorporated.
Coat waffle iron with nonstick spray, and ladle 1/4 C of batter onto hot grates. Cook until waffles are crispy and brown. Top with sliced strawberries, butter, and syrup.
