Best Guacamole

I, admittedly, am a guacamole snob. I’ve had a lot of sub par, some truly awful, guacamoles. As simple of a dish as it is to make, most guacamoles end up under seasoned and bland. The key to a great, or best if you will, guacamole, is salt and lime juice. Avocado is fatty and rich, and you need plenty (way more than you’d think) of salt and acid to cut through that richness. My recipe is no frills- just avocado, salt, lime, garlic, onion, and cilantro. It honestly needs nothing else. But make this your own! Add in jalapeño, chopped tomato, roasted tomatillo- whatever suits your fancy. But please, oh please I beg you, DON’T.SKIMP.ON.THE.SALT.AND.LIME. You and your tacos will thank me for it.

Ingredients:

3 large Haas avocados, ripe

1 tsp garlic, grated

1/4 C fresh lime juice

2 tsp kosher salt

1/4 C onion, finely chopped

1/4 C cilantro, finely chopped

Remove pits from avocado and scoop into a large bowl. Mash with a fork or a potato masher until smooth, but with a few larger chunks of avocado remaining. Add garlic, lime, salt, onion, and cilantro. Mix until combined. Check seasoning, and season to taste with more lime and salt if needed.
