Breakfast Bites
Happy Fine Art Friday! This week’s art inspired recipe comes from a place of pure aggravation and frugalness. I have been desperate to clean out my disaster of a pantry and start using up the ingredients I already have before buying anything new. Not only to save money, but to be less wasteful and stop playing Jenga every time I open up my cabinets. Regardless of my motivations, this recipe is fantastic. It uses simple pantry ingredients, comes together in minutes, and is a protein packed treat to eat as a breakfast on the go or as a snack. Nut butter, honey, coconut, flaxseed, oats, a little bit of crunch from some puffed quinoa, and a sprinkle of chocolate chunks make these healthy and out of this world good. My toddler loves them, I love them, my husband loves them- it’s kind of hard not to love them. My only piece of advice, make a double batch, because these will be gobbled up in no time.
Breakfast Bites
Ingredients:
1/2 C unsalted almond butter
1/2 C sunflower seed butter
1/4 C honey
2 tsp cocoa powder
1/4 tsp kosher salt
1 Tbsp flaxseed
1/3 C puffed quinoa
1/3 C rolled oats
1/4 C dark chocolate chunks
1/4 C unsweetened coconut flakes
Mix all ingredients together in a large bowl. Scoop out a heaping teaspoon worth of the nut butter mixture and roll into balls. Store in an airtight container in the refrigerator.
