Tomato Toast with Miso Mayo

It’s officially tomato season, and this recipe is giving me life. I will literally eat this tomato toast with miso mayo every day until the leaves start changing color and the smell of pumpkin spice lattes infiltrate the air. Honestly, it’s pretty hard to even call this a recipe because it’s so simple, and simplicity deserves to shine. Using the best quality will make all the difference in this dish. No mealy under ripe tomatoes, friends. Only the juiciest, freshest, heirloom tomatoes money can buy, and the crustiest loaf of artisanal bread you can find. And let’s talk about this mayo, shall we? The miso paste and lemon juice add a slightly sweet, tangy umami flavor that enhances the sweetness of the tomatoes in such a delightful way. And please don’t be stingy with the stuff, the mayo should be slathered on thick, and the accouterments generously sprinkled.

Tomato Toast with Miso Mayo

Ingredients:

1/3 C mayo

2 tsp lemon juice

1 Tbsp white miso paste

1-2 heirloom tomatoes

crusty bread

1 scallion, sliced thin

toasted sesame seeds

aleppo pepper flakes

Maldon flake salt

In a small bowl combine mayo, lemon juice, and miso paste. Whisk until all the miso paste has dissolved and is fully incorporated. Toast some of your favorite crusty bread, and thinly slice the best damn heirloom tomatoes money can buy. Slather the bread with miso mayo (don’t be shy here), and top with sliced tomato. Garnish with sliced scallions, toasted sesame seeds, aleppo pepper flakes, and flaky sea salt.
